Smoking the Aslak

On my last day with Antti and Anja, Antti decided to smoke a salmon at home.  We had a lot of fun documenting the process, and along the way, we decided to name the salmon Aslak -- for reasons I won't get into here.

So, first step is to open up Aslak:

And then salt him:

Actually, these photos are from the day before, since Antti wrapped the salted Aslak up to sleep in the cool room overnight. Here he is wrapping up Aslak, with his beautiful assistant, Anja, by his side:

The next morning, Antti started the fire:

And then spread woodchips and sugar cubes in the bottom of the smoker:

Very important step: oiling the rack that Aslak would cook on:

Once Aslak was in the smoker, I took pictures of some of my favorite things around Antti and Anja's house. First, Anja's flowers:

And now we're back to Aslak, who was almost ready (after about 45 minutes) to come out:

After we ate, it was time to head to the train station, where we sadly had to say goodbye for now.  I had an excellent visit with these two before and after the trip to Rovaniemi, and I'll certainly miss them:

And yes, that's a Gators shirt that Antti is wearing -- Juha was a Gators fan when he was living in Florida and brought it to Antti as a present. But don't worry: we'll get Antti a Florida State Seminoles shirt soon enough.
